Food Lately: A Diet That Works For Me.

 *Disclaimer- Before I start this post, I just wanted to remind everyone that these are my opinions; this is what I do on a day to day basis.  I am in no way trying to proclaim this as the right way, it's just what I've come to find works for me, after reading many books & watching many documentaries including: Michael Pollan's The Omnivore's Dilema, In Defense of Food, Barbara Kingsolver's Animal, Vegetable, Miracle; Food Inc.; Forks Over Knives; Fat, Sick, and Nearly Dead; and the like.

Drink Breakfast: 


Blueberry Almond Butter Smoothie Credit
Back in April, I decided I was going to experiment with smoothies a bit more intensely than I had before.  It has stuck: I've been drinking a smoothie of one sort or another every morning since.  I always use frozen fruit, yogurt/ juice/ or almond milk, add greens (usually spinach), and an element of protein (sometimes nut butter, flax seed, and/or whey protein).

Why I like it: Everything in there has meaning.  There's no wasted calories and I'm getting a lot more nutrition since I couldn't just lay all of the ingredients out and eat them- too much to eat in a sitting!  It fuels me through my morning workout- giving me a full 500 calories of goodness to burn.







 Lunch: Or, why I don't do salads.



I've never been a salad person.  Sure, from time to time I get excited about some ingredient or another and can't wait to have a salad.  But usually I pass.  Also, at this point in the day I've already gotten my daily fill on greens via my morning smoothie.  So, I skip the lettuce and usually make a plate of cut up raw veggies & fruit.  

But that alone is boring, and has no protein or fat.   I always find a way to make it exciting for myself & add in the elements of the meal that I'm missing.  Pictured above, you may remember "ants on a log".  In my version I add sunflower seeds to the mix. I also made some coleslaw to use as a bit of a dip.  Sometimes I'll make guacamole for dipping or put a bit of cheese, smoked salmon, or boiled eggs on the plate too.  Yum.

Dinner: Make the meat hard to find.  


While this might not be the theme of my husband's plate, that doesn't mean it can't be mine.  You can make meat heavy meals for the men in your life and easily make yours healthier by just cutting your meat portion down and taking most of (or all of in some cases) the vegetable elements of the meal.

I also try to avoid or eat small portions of whatever starch I've made at dinner.  Sweet potatoes?  Pile them on.  Rice, white potatoes, ect, pass for more veggies.


Summary:

So by then end of the day, my goal is to look back through what I've ate and say that yes, plants were the star.  I want to eat 2 or fewer servings of animal products, and 1-0 servings of carbohydrates/ starch foods.  This doesn't happen every day of course, but if I can meet these goals 6 days each week that's much better than never, right?

Eating this way has made me feel better in general.  I've kept off the 20Lbs that I lost a year ago and am able to power through every day with a sense of joy.  My favorite time of day is early afternoon once I've had a healthy breakfast, lunch, and a killer work out.  That feeling right there is worth it all for me.

Great post! I love having smoothies in the morning too, and raw fruits and such like you in the afternoon. I'm with you on the starchy stuff. I pretty much eliminated carbs from my diet and I'm keeping off the 25 lbs I've lost from last summer. It sucks not eating pasta, because I love pasta but everyone once in awhile we might get Noodles & Co and I'll get whole wheat noodles of course.

I just left a comment for you in the team thread about food and how fun to see this post now. I like smoothies and the kids are now asking for me to make them one when I make mine.

I have been really worried about returning to work and managing lunch--I cannot stand sandwiches so need to make sure I create things that are filling and healthy so I don't come home and gorge.

You really have inspired me! Keep it up:)

I loved Forks Over Knives! After watching that documentary we switched to a vegetarian diet and loved it! After about 6 months we somehow fell off and now I miss it. I may need to go back to that.

Congrats on keeping off the weight and for continuing to get healthy in all aspects of your life! My hubby has smoothies a lot but I just need to get over the idea of not drinking calories.

I loved Forks Over Knives! I've always been a big veggie person, so cutting out unhealthy meat has never been an issue for me, but my husband is practically a carnivore. He's cut back a lot since we've been together, and I'm glad, but he still gets a little cranky when I cook vegetarian fare.

Now, carbs... those I can't live without! I'm trying to switch over to more whole grain and such, but MAN. Bread and chips. And potatoes. Get in my belly.

Sounds like a great & healthy way of eating! I try to eat primarily plants, but I tend to gravitate towards carbs when I am feeling lazy or craving comfort food. For me, preparing large meals and storing the excess/ having easily re-heatable meals has been super helpful.

We're so bad about our carbs. Almost every meal is made with pasta! And I hate to cook, so I'm always looking for something easy...which isn't usually healthy either!

Looks good. I eat a lot of veggies too--I LOVE them. It's amazing how that bothers the folks at work though--they always comment on my lunch. Whatever.

I'm with you on salad--I don't like them. I just feel like they are void of nutrition.

Your ants on a log look delicious! Congratulations on keeping off the 20lbs. That is fantastic! My trick to weight maintenance has been to eat virtually the same things every day (monday thru Friday) so I do not vary in calorie intake. It sounds boring, but I also have a wacky stomache that can not eat everything!

my problem is that I'm not too hungry in the morning, and I eat more as the day goes on. I know that's not good for me, and I also end up eating what DH makes for dinner. I need to switch that upside down! {:-D

I'm glad you've been able to find something that works for you. It's so hard to figure out what food works and what doesn't because everyone is so different. I'm definitely going to have to give smoothies a try after reading this.

Your smoothie and lunch look exactly like how I'd like to eat every day. But I have to confess that I really love bread, toasted, so I think I'd cheat a bit on the carbs!
